patriotic fruit pizza

i present to you, as part of the monthly dessert challenge at lady behind the curtain, patriotic fruit pizza. i looove this time of year! i’m not very good at doing crafty things {or even keeping up my decor with the changing holidays} but this is one of my favorite times of the year to celebrate. {besides christmas, obviously}. i love the season of bbqs, fireworks, parades, rodeos, and honoring our freedoms!

i knew exactly what i wanted to make when i saw that for the challenge this month it was strawberries and raspberries because i was already thinking red, white, and blue. i imagine i’m not alone in this:)
this recipe is so versatile and i love that you can make it completely from scratch, or take a couple short cuts if you don’t have the time. it’s a perfect dish to bring to a friends or to let your kids snack on {there’s fruit so it works, right?}

without further ado, here’s the recipe. um, it only has three ingredients, so ya, it’s that easy too!

cookie dough *see recipe below
frosting *see recipe below
fruit-strawberries, raspberries, and blueberries

1) cook cookies according to recipe {or pouch or whatever} and let cool completely on cooling racks.

2) spread frosting generously and top with fruit.

3) make in a pretty patriotic pattern, or don’t.

make-from-scratch snickerdoodles
1 1/2 sticks salted butter
3/4 c brown sugar
3/4 c white sugar
1 egg
1 tsp baking soda
1/2 tsp salt
1 tsp vanilla
2-2 1/2 c flour
cinnamon sugar for rolling

1) cream butter and sugar in mixer. add egg and combine. add the rest of the ingredients except flour.
2) add flour cup by cup, until the dough starts to fall off mixer. not too sticky, not to stiff.
3) drop spoonfuls in cinnamon sugar mixture and place on baking sheet.
4) bake at 350 degrees for 10 mins

cream cheese frosting
1/2 stick salted butter
4 oz cream cheese
3 c powdered sugar
1/2 c milk
1/2-1 tsp vanilla

combine butter and cream cheese. slowly alternate adding pwd sugar and milk until mixture is smooth, but not runny. {or just cheat and use frosting from the store. rainbow chip to make it more interesting:)}

i ate every single one of these right after taking the pictures. blogger perks.
