apples and cinnamon pop tarts

i’m getting pretty good at finding yummy treats. i’m interestingly having a hard time eating them! they look so good in pictures and then my pregnancy belly tells me i just have to have that treat RIGHT NOW. after making it though, i taste it and them i’m done! i don’t know what my deal is. {if it’s candy though then someone come help me stop.} the dessert challenge for this month was apples and cinnamon so i wanted something that wasn’t your traditional recipe.

pop tarts are one of those treats i am currently LOVING {sooo bad for you. they are more treat than breakfast…} so, i thought i’d whip up some homemade ones because those always taste infinitely better!

the recipe is really easy, especially if you happen to have pie crust on hand. then it’s basically just apples and spices inside the pie crust!{love those kind of recipes}.

1 8″ pie crust {yields 6 pop tarts}
2-3 medium apples, chopped finely
1 1/2 Tbs flour
1/4 c sugar
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
dash of salt

1) prepare your pie crust by rolling out and cutting into 12 equal squares.
2) mix sugar, flour, nutmeg, cinnamon and salt. stir in apples.
3) spoon about 1 heaping Tbs apple mixture onto 6 of your pie crust squares.
4) make your tarts by covering apples with another square of pie crust and then crimping the edges to seal in the mixture.
5) make 1-2 tiny slits in the opening to allow steam to escape.
6) bake at 425 degrees for 15 mins or until edges start to brown
7) frost with frosting of your choice {or not}

wrap it up, stick a label on it, and you have a nice fall gift!

i did happen to scarf one down right after they came out of the oven. these taste amazing with vanilla ice cream. they also are pretty good cold. it depends on your favorite way to eat pastries.
now, imagine the possibilities of these with some fresh berries, or even a fruit combo. excuse me while i go walk it off.
